Meal Of The Month: Kentucky Salad

It can sometimes be challenging to eat enough vegetables when you’re on the road. This make-ahead side dish is easy to make, yummy to eat and full of veggies, so why not enjoy it all year?

When you’re in an RV, any meal that can be made in advance is always a great choice. TIP: Keep a container of dressing in a separate container and have all the salad ingredients prepped in advance, then use whatever portions you need for each meal.

The secret is to buy bunches of fresh broccoli and use the stem as well; just peel the lower part of the stem with a carrot peeler. Here’s the recipe!

Salad

  • 4 cups broccoli (including the stems), finely chopped
  • ¾ cup sunflower seeds
  • ½ cup raisins or dried cranberries
  • ½ cup red onion, finely chopped
  • 1 unpeeled red apple, chopped (can substitute red grapes cut in half)
  • 8 strips of cooked bacon, crumbled

Dressing

  • 1 cup Ranch dressing
  • ¼ cup vinegar
  • ½ cup sugar

Directions

Mix all the salad ingredients in a large bowl. Mix the dressing ingredients in a separate bowl. Add dressing an hour before serving so that the flavor gets absorbed and toss until evenly coated. Just don’t let it sit all day with the dressing. If more dressing is needed, just add more Ranch. Enjoy!
